Easy Chicken Piccata

I tried this recipe last week and it was a hit! It was a VERY simple recipe.

For the side, I sautéed some veggies in a little olive oil, garlic salt and chicken broth. I added them to pasta and squeezed in some fresh lemon for added flavor.

4 Ingredient Meatloaf

This is amazing and can’t get any easier to make.

Ingredients:
1 lb ground beef
1 box Stove Top Stuffing (any flavor)
2 eggs
1/2 cup ketchup
1/2 cup water (or a little more if your beef is super lean)

1. Preheat oven to 350 degrees. Grease a bread loaf pan. (affiliate link)
2. Mix all ingredients, but set aside half of the ketchup for later.
3. Fill the pan and top with remaining ketchup.
4. Bake 45 minutes. Wait 5 minutes before serving. Serve with potatoes, veggies or anything else you’d like. Yum!

 

3-Ingredient Baked Donuts

We tried this recipe off Pinterest, and it was a hit! I got these donut pans on Amazon.  (affiliate link) They are non-stick and easy to use. These donuts are ready in less than 30 minutes and my 10 year old made them by herself!

Ingredients:

  • Chocolate Cake Mix
  • One Can of Pumpkin (15 oz)
  • Chocolate Frosting
  • Optional- Sprinkles

Preheat oven to 425. Spray the pans with non-stick spray and set aside.

Stir together the cake mix (just the dry mix) and pumpkin until smooth. Transfer batter to a gallon sized bag. Cut a small hole in the bottom corner and fill each donut ring to almost full with the batter.

Bake for 7-8 minutes. Let cool on a wire rack. Frost when cool. Sprinkles are optional. Enjoy! They are super yummy and a little healthier than fried donuts:)

Instant Pot French Onion Soup

3 Tbsp butter
3 lb Onions, sliced
1/2 tsp baking soda
3 Tbsp Worcestershire Sauce
1 tsp dried thyme leaves
1 qt (4 cups) beef broth
16 French Bread slices
1/4 cup shredded Parmesan cheese, divided
3 Tbsp Apple Cider Vinegar

Melt butter in electric pressure cooker using the Sauté setting. Add onions and baking soda; cook 3 min. or until slightly softened, stirring frequently. Stir in Worcestershire sauce and thyme. Close and lock lid. Turn Pressure Release Valve to Sealing position.

Cook 20 min. using HIGH PRESSURE COOK setting. When timer goes off, use Quick Pressure Release method to carefully release pressure before opening lid. Add broth, cook 5 mins using SAUTÉ setting on medium heat.

Meanwhile heat broiler. Place bread slices in single layer on baking sheet. Top evenly with 1/4 cup cheese. Broil 3-5 min. or until Cheese is lightly browned.

Turn off pressure cooker. Stir vinegar and remaining cheese into soup. Serve with bread slices.

Chicken Divon

Layer #1
20 oz. broccoli cut
5 chicken breasts cooked and cut up

Layer #2 in a bowl, mix together
2 cans cream of chicken soup
1 cup mayo
1 tsp. lemon juice

Layer#3
4 oz. shredded cheddar cheese

Layer #4
1  1/4 cup Pepperidge farm stuffing mix

In a Pyrex dish, put in Layer 1, 2, 3, and 4. Then, drizzle the top with 4 tablespoons of melted butter. Bake at 350 for 1 hour.

Pumpkin Bread

This is honestly the best pumpkin bread I have ever had! My mom used to make it when we were young, and now I make it for my kids. This recipe makes 3 big loaves but I sometimes do 7 smaller loaf pans (affiliate links) when I want to give them away. This is the bread I made for the teachers to give them at conferences.

Ingredients:

  • 3  1/2 cups flour
  • 3 cups sugar
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1  1/2 tsp salt
  • 1 cup chopped nuts (optional- I don’t use these)
  • 1 cup oil
  • 4 eggs
  • 2/3 cup water
  • 1 small can pumpkin

Combine and mix dry ingredients well. Then, add the liquid ingredients. Beat well. I always spray containers with cooking spray before pouring the batter in. Cook at 350 for 1 hour. Enjoy!
